Alex Headlands: Dinner with a View!

We're at the sunny coast for a few days leading up to Christmas and they have really turned the weather on for us, it's beautiful!

We're staying at the Break Free Alexandra Beach Resort (I'll blog about that soon!) and just across the road is the Alex Heads Surf Club and a patrolled beach (so convenient!). We went to the surf club for dinner tonight, it was delicious and with an amazing view! 




We got there around 5.30pm and it was almost full by 6.00 so I'd recommend getting there early or booking a table. 

The food was quick, delicious and the staff were all very friendly. They had a kids play area with play station type games and $2 choc pick games. The play area was more suitable to primary aged kids but Miss Bumpkin enjoyed it all the same.

Miss Bumpkin even managed to win the kids lucky door prize! 

Highly recommend it!

Reindeer Bark Recipe


It's Mr Slicker's family Christmas today. It's at the family beach house so we will be back and forth to the beach in between eating, catching up and presents. I have been given the task of making a sweet. I thought what would everyone including the kids like to eat and that is easy for me and tastes delicious. Reindeer bark, of course! It will be great as it doesn't require plates, it's no fuss and we can eat it on the run!

Prep time:
20mins (give or take)

Ingredients:
  • 3 bags of Cadbury chocolate melting buttons (you can use dark, white or milk) 
  • 10 x candy canes (any flavour)

That's it, yep TWO ingredients

Method:
  • fill a large saucepan 1/4 full with water, turn the stove on and begin to boil
  • place all chocolate buttons in a glass bowl
  • place glass bowl over pot and allow to slowly melt chocolate, stirring occasionally
    Tip: this is called the double-boiler method :)
  • you can also melt the chocolate in the microwave  
    • place the chocolate in a heat proof dish, heat for approximately 4 mins or until melted (depends on your microwave). Be sure to stir every 15 seconds and don't walk away otherwise you will burn it! I do think it's consistency is better if you melt with the double-boiler method but it is up to you :)

  • line a baking tray with alfoil or baking paper
  • pour chocolate onto tray and pick the tray up and roll the chocolate into the corners












  • place candy canes into a zip lock bag and bang the hell out of it (it's really a good release method, hehe), you can use whatever you like to break it up. I used the handle of a knife sharpener or you can use a rolling pin, just something heavy and strong.
  • sprinkle broken up candy canes onto the chocolate
  • set in freezer for at least 2 hours or overnight
  • once set, take the bark out of the tray and place onto a chopping board, removing the alfoil/baking paper 
 
  • use a meat cleaver or large knife to break up chocolate into shards and remember it's bark so keep it all different shapes and sizes
  • keep refrigerated in a sealed container
  • serve on your favourite platter
  • enjoy
You can really go cray cray with what you want to put on the bark - nuts, lollies, marshmallows, the possibilities are endless. I stuck with the traditional with just candy canes.

I did two versions of the bark - white chocolate with raspberry flavoured candy canes and dark chocolate with peppermint flavoured candy canes. Both are so yummy, it's a little dangerous!

Christmas Table Ideas




As you all know this year Mr Slicker and I are hosting Christmas morning/breakfast at our house. As #Bumpkin has already pointed out, I have OCD, well maybe not really but I’m just very, very particular, I like things to match and to sit perfectly etc, who doesn’t really?

So for the Christmas table you need to decide on a theme or a colour scheme, I have decided to go green and red. The table will mainly be red with hints of green.


Hands up who else isn’t a fan of eating off plastic and certainly not paper plates? They flip everywhere; once you start using them they are wet and soggy and trying to cut anything on them is a nightmare! So I decided to buy some plates from Kmart for my table. They are called ‘Beaded Charger Plate’ and are $2.00, made of melamine and come in gold, red and silver, I decided on red. The best thing about them being made of melamine, is that the kids can have the same plates so they match (yes OCD, i know!!) and they won't break. They are quite a large plate, so there is lots of room to fill your plate with all those Christmas goodies! The picture is actually quite deceiving; they have a sparkly fleck through them which is lovely. 

For Master Slicker (2.5yo) and his cousin (8 months) I purchased two of these Santa tumblers, they are so cute and I just couldn’t resist!! These will be on the table at their place setting and are really a bit of fun! They are also from Kmart and were $3.00, yep only $3.00!

What will the adults be using you say? Mason jars of course. On our honeymoon to the USA back in 2011 we drank at my (now) favourite bar in Las Vegas, out of Mason jars, it was one of the best nights ever and ever since I have been obsessed with Mason jars. Kmart doesn’t disappoint, the glass Mason jars were also purchased from there at only $2.00 a pop!!!  Each guest, excluding the littlies will have one to sip their beverages out of, trust me everything tastes better out of a mason jar! These could also be used for a sneaky Christmas beverage later in the day too.

Looky looky, the straw is also red which fits in perfectly with my theme! (yes that’s my OCD again!). Before December hit and the crazy Christmas people came out, Kmart also had green and red colours Mason jars for Christmas, I was so disappointed I missed out on them, I should have bought them when I saw them! Kmart have all different coloured jars all year round, pop in and get one today, you won't regret it!

Each place setting will have the persons name, I found this awesome idea on Pinterest and will absolutely be using it! Aldi have cheap and tasty candy canes to make this inexpensive. On a positive note all their lollies and candy canes have no artificial colours and flavours #winning! Just a couple of candy canes, a ribbon and a place card and you can create a beautiful setting which the guests can also take home.

I also decided to stick with red for the placemats as well as I couldn’t really find any green ones and quite frankly green ones may have been a little bit too much to look at! I purchased $2.00 placemats from good ol’ Kmart (yes there's a theme here, I LOVE Kmart!) They are a cotton type material so they are washable and will last for quite some time. They have a silver fleck through them which fit in well with the plates and also my centrepieces. 

To finish the table off and to make it even more merry I will add these cute bonbon's from Woolworths to our table. They were only $15 for a pack of eight, I love a bon bon, the cute party hat and the corny jokes make it really feel like Christmas. 







Our Christmas feast will be a help yourself kind of occasion with all the food laid out through the middle of the table. These will be served on, yep you guessed it, green platters, and these green platters are as old as the hills and were from Target. To protect our wooden table from all the platters and possible food spillage, I will put a red table runner over the table.




Every good Christmas table needs a beautiful centrepiece. I have decided to keep it simple because our table will be jam packed with the place settings and lots of yummy food! I will be putting two silver glitter reindeer in the middle of the table also purchased from my favourite shop Kmart for $6.00 each.  




Another awesome idea I saw on Pinterest was so simple but so effective but definitely for the table that has more room. Collect a dead branch from your yard or Local Park. Remove all dead leaves. Spray paint tree your desired colours – silver or gold is best for Christmas and looks so effective. Dry in the sun. Place pebbles, baubles or stones in the base of a jar filling ¾ of the way up, place branch in. You will need to fill the vase high to ensure the branch is kept steady and in place. You can also leave the vase empty as seen below. You can decorate the tree with those special ornaments, Christmas decorations or leave empty.

 

Christmas is my favourite time of the year, I really love Christmas, just sayin'!

Review: Game On Family Fun Centre


Today we experienced Game On Family Fun Centre at North Lakes. Immediately Master Slicker and Miss Bumpkin were attracted to all the wild animals they have there, fake ones of course! It's the theme they have going on there, lions, gorillas, zebras and any other animal you can think of. It was fun with lots of bright colours and things to look at for kids of all ages! 
Game On is open 9am-5pm everyday, being school holidays we paid $10.90 each for the kids which included a free animal or car ride. 

There were two main sections: under 4 years and the big kids area. The under 4's section had lots of fun things: an over sized floor piano to jump on and create music. This ultimately brought me back to my childhood and watching one of my favourite movies BIG! Anyway I digress...there was also a ball pit, a jungle gym which was all padded with two small slides suitable for the age group. There were blocks to play with which were soft, so great for the little ones in case they tumble on them. They also had some other toys like a foam house, walker and a spinner sitting on the floor which Miss Bumpkin took a shine to. We had children from 1-3 years of age and the ball pit was the clear favourite! A small ball pit is a good Christmas gift idea for little ones if you're still shopping. 


The big kid section was also great, lots to do, a set of 4 huge slides in, you guessed it, tiger print! Lots of climbing areas which looked like fun, but was probably more suitable for 4 and up kids as it was VERY high up!



















Onto the free ticket activity, Miss Bumpkin and Master Slicker both went for a car ride - similar to dodgem cars but much safer. There were only four on the track at the one time and there wasn't much bumping and crashing. I wouldn't suggest kids under 2 go on the car ride as you need to steer and push a pedal to go. 

The other option for the free activity was an animal ride on a robotic elephant. Both of the little ones had a go on this and one loved it and cried when she hoped off but the other child was tired so wasn't so keen. The animal actually walks and the staff steer it around an area for you. Great idea!



 
They also had a glow in the dark mini put put room, our kids were a bit young but a great idea for primary school aged children.


Staff were friendly and the facilities were clean, even to my OCD standard, ha! 

The set up of the entire centre was a little awkward. It wasn't all open and there were blind spots so it was hard to see all the kids at once. We had two little ones and two toddlers so we were utilising all sections of the centre. We were constantly hopping up to check on the kids as we couldn't see them. 

The only down side is no food (apart from puréed baby food) and no drinks (apart from water of course) are allowed in. Most play centres have this rule and it is for health and safety reasons. Silly rule but what can you do? The food was nice, however it seemed to be more catered towards big kids or adults. There wasn't much to choose from for the littles when you're not allowed to bring their food in. Bumpkin and I had a milkshake which was delish however Master Bumpkin and Miss Slicker hijacked mine and I only got a few sips (must have been good then hey?). I purchased a lamington for Master Slicker which all of the kids shared which was lovely but huge so definitely not kid size. Other play centres I have been to have had fruit to serve (kid friendly - like slices of watermelon with the skin on), mini cupcakes and kid biscuits like arrowroots.
You can also have parties there, individual rooms were scattered around so you have privacy and it takes the pressure off you when it's party time! Check out their website for packages.

The kids had a great time so I'd probably go again, it opens at 9am, we were there soon after opening and it wasn't too busy but when we were leaving at 11am it was pandemonium (school holidays doesn't help!). It was great to tire the kids out (best part really, hehe), Master Slicker is now taking a nap. Time for me to sign off and put my feet up.

Adopt an Aussie Farmer

A few days ago I received a message from my good friend Jess who lives an hour North East of Winton. Jess' partner is a fourth generation Winton district farmer (cattle and a few hundred sheep) and has lived in the area his whole life. They have two kids, a boy who has just finished Kindy by correspondence (well done teacher Jess!) and a little miss who was two a few weeks back. They haven't had much rain in the few years I've known them so are hay feeding their cattle, they do this to ensure there is some grass seeds there when the rain does come. They will continue with hay feeding  until their grass grows enough to fill their cattle's bellies, this will be months away even if they receive decent rain over the "wet season". They're doing it tough but luckily better than the Smith's that I blogged about last week. The Kindy program is associated with Longreach School of the Air and to Jess' surprise an enormous package arrived for them this week. A family from Pullenvale (15km west of Brisbane City) participated in the Adopt an Aussie Farmer campaign that was organised by Thoroughbred Breeders Queensland. The family sent an array of goodies to be enjoyed over the Christmas period as well as numerous presents for the kiddies.

It's stories like these that warm your heart, touch your soul and make you realise there are still good people in this world. The news is full of awful and dramatic stories and sometimes the good stories like these ones are overlooked. Thoroughbred Breeders Queensland organised for 250(!) hampers to be delivered to farming families in the Longreach and Winton areas as well as Mt Isa and Charleville. They also managed to raise over $17 000 for farming families! You can read about their efforts in this ABC story.

I was so pleased to see my friends post about rain in the Winton area this past week, some had falls of up to 80mm for the week. Please remember that a few days of rain is not going to break this drought, follow up rain is needed so that grass can grow and rejuvenate. You can still help farmers doing it tough by donating to Buy a Bale and Aussie Helpers. Every family needs a Farmer and every Farmer needs a Townie


 
Every family needs a farmer and every farmer needs a townie” these are the words that were spoken by Jimmy Smith to me when I recently took a drive to meet him and his wife Sandra. They own and run Cotswold Hills a 60 000 acre property about an hour southwest of Winton.  However I wasn’t fortunate enough to visit their lovely home on this day as they haven’t been living at home for the last 12 months or so. They haven’t had rain at Cotswold Hills for about 2 years so their dams are bone dead dry and they have no feed for 1000 or so head of cattle. I had met Jimmy and Sandra in passing but didn’t learn the true strength of character and resilience until this visit. The word stoic was generated by an ancient Greek school of philosophy that asserted that happiness can only be achieved by accepting life's ups and downs as the products of unalterable destiny. Stoic is the perfect description for this couple grasping at the few grass picks around them. They were kind, generous, affable and some of the most optimistic and positive people I’ve met in my life.

Anyway I digress, back to the story of where I went today. I took a drive, well actually Mr Bumpkin drove and I happily gazed out the passenger window while Miss Bumpkin and Master Bumpkin watched a bit of Playschool and had a doze in the back.  We drove about 45 minutes west of Winton to a place called Collingwood Reserve and no there wasn’t a magpie or pies supporter in sight, but then again I didn’t see anyone else besides Jimmy, Sandra and a few hundred head of cattle.

They’re adgisting their cattle on this stock route, to simplify things, they’re renting land that has some grass (not a lot, but more than their dirt ridden paddocks at home) so that they can feed their cattle. Jimmy tells me that the Reserve is quite literally a block of about 8000 acres, he has had to put up fences to keep his cattle off the road and provide his own watering points (troughs with big tanks near them to keep their cattle hydrated). So just because he’s renting the land doesn’t mean it comes with any facilities. The Smith’s have had cattle (about ¼ what they normally run) here for almost a month and are required to vacate and find somewhere else to adgist their cattle just days before Christmas. They can’t go home as there’s no water or feed and they technically aren’t entitled to request another permit from the local council until the new year. For the townies amongst us, out here you can have 2 x 28 day permits to run stock on stock routes per calendar year. This is the second permit the Smith’s have held in 2014 so they can’t apply again until the near year but the problem is the drought is so far reaching out here that adgistment options are very few. When I asked where to from here, they responded “we don’t know”,   they’re waiting patiently for Huey or god or whoever to graciously send some rain. But just like money doesn’t grow on trees, grass doesn’t grow overnight and due to the extremely dry period from 2011-2014 the Smith’s and everyone out here needs rain events, or follow up rain as it’s so dry the grass needs a number of rain events for it to rejuvenate. To put it into perspective, usually by the end of November the Winton area would on average receive 345mm of rain, so far this year it’s been 156mm and by this time last year it was 141mm (source http://www.eldersweather.com.au). These recordings are taken from the Winton Airport just outside of town, Cotswold Hills which is about 100km from Winton has been lucky to receive a passing shower at best over the last two years. We live about 15km from town and had one rain event last year providing us 23mm, we’ve had two rain events this year (nine months apart) sending down about 120mm so you can understand how differing the figures can be.
Jimmy and Sandra tend to their cattle every day, there’s no such thing as a public holiday or weekend. Cattle have to eat and drink everyday so there’s no rest for them. They truck five loads of water in the morning and two in the afternoon to three watering points across the Reserve, although not “hard” work it’s time consuming and there is no way to multi task as one needs to supervise the pumping process. The cattle’s main feed is the grass and a supplement of lick block, which provides stock with energy, protein and minerals to keep them in good condition. There’s no one tending to Cotswold Hill’s so they’re going back and forth every few days to check on things back home. They’re living in a converted horse float under a lonely tree and are completely self sufficient. Most would call this camping, however I’m not sure there would be many opting for camping in 40+ degree heat, the horse float has air conditioning but struggles with the concept of blowing cool air in such treacherous conditions.

Jimmy has lived in the Winton area most his life and cattle is in his blood, Sandra grew up down the road in Boulia which is 370km from Winton, (yes that’s considered down the road out here). They have two children Gavin and Justin, Gavin is in on the family business too and also helps with his wife’s family property in the Winton area. When I ask when do you think you’ll be able to go home – when it rains and by that they mean a number of rain events, a heavy shower isn’t going to save their livelihood this time. 

Joy and happiness was brought to the Smith family earlier this year when Gavin’s wife Jodie gave birth to their first grandchild Aaron. Unfortunately if the extreme weather conditions continue and there’s no rain Jimmy may not be able to leave the Reserve to enjoy his grandson’s first Christmas there’s even a chance that Gavin may have to help out on the day. The Smith’s story is unfortunately one of many; on 30 October 2014 ABC reported 46 properties in the Longreach area were in the process of being repossessed due to unpaid loans. 

So you ask, what can you do to help? Buy local, support local and keep a farmer in business. Every meal or snack we eat can be grown, bought and produced in Australia, if we don’t support our local businesses then there will soon be none left. As Jimmy said every family needs a farmer and every farmer needs a townie to produce, manufacture and sell the product. You can help farming families by supporting organisations such as Buy a Bale of Hay and Aussie Helpers, these organisations are travelling the country providing relief, hope and assistance to those who need it most.

As I was wrapping up my talk with Jimmy and Sandra over my shoulder were some dark and promising looking clouds, unfortunately on this day no rain eventuated, however please keep farmers in your thoughts and hope and pray clouds like these lead to rain today, tomorrow, next week and for many weeks over the Christmas / New Year period and beyond. 

When celebrating the festive season this year buy fresh, buy local and spare a thought for those who are doing it tough right around the country.

Catch you later the wild, wild west!

Tomorrow the kids and I leave our home in the dusty outback bound for Brisbane! I am beyond excited that I will be reunited with my sister #Slicker and our family and friends. As Miss Bumpkin tells me we will be going on a small plane not a big plane to Brisbane. I don't think she knows the difference between small and big planes but I hope the plane that picks us up in Longreach meets to her satisfaction 😝!

We have lived most of Miss Bumpkin's existence away from family so these visits "home" mean so much and bring such joy to me. The kids get to spend time with their grandparents, Aunty's and Uncle's and most importantly their cousins. Miss Bumpkin and Master Slicker were born 7 months apart and despite the distance have formed a very tight bond. We haven't been back to see family and friends for 4 months and only last week Miss Bumpkin informed me that Master Slicker is her best friend 😍. It amazes me and fills my heart with love the bond these two share, despite the distance they pick up where they left off and I know they'll be best mates for life no matter where life takes us. 

Anyway back to the wild wild west, and cya later to the 40+ degree days, dust all through the house, flies up the nose, ears and mouth and the kids driving me nuts because they're cooped up in the house most of the afternoon as it's too damn hot outside! But I will miss the outback way of life, the wide open spaces as far as the eye can see, the sounds of the bush (silence), the sunrises and sunsets, the peaceful surroundings, the simple way of life, starry starry nights and the friendly hellos when walking down the street.

I'll be taking a little break from my outback blogs (stay tuned for my farmer blog later this week) but they'll be back bigger and better in 2015 (wait! what? It's 2015 already? I remember celebrating NYE 2000 like it was yesterday). Two Happy Chappy's are off on lots of adventures while I'm away from the bush (as Miss Bumpkin refers to it as). We'll be off on lunch dates, shopping adventures, celebrating Christmas and New Year and a Two Happy Chappy's holiday to Melbourne! The Bumpkin family is also off on a cheeky beach visit before Christmas.

Christmas Breakfast Feast


This year Mr Slicker and I are hosting Christmas morning/breakfast at our house. A lot of you might dread this but I really love entertaining and having people at our home. Entertaining can be quite costly so thankfully it is just Mr Slicker’s family coming over which including us, consists of 7 adults, Master Slicker and a baby (I’m worried the baby may break the bank and I won’t be able to feed everyone 😝).

I really like people to feel welcome and well looked after when they come to my home so I like to have plenty of food and a few options to choose from. Being that it’s breakfast we’ll have two types of juice for the morning – apple and orange. For a twist I’ll also offer water with fresh lime. This is an extra special treat for us as the lime is straight from our backyard, I love home grown fruit, we also have an apple, mandarin trees, mango and lemon trees (Watch this space for a blog on growing your own fruit trees).

  • Ingredients 
    • Water, Ice & Lime
  • Method 
    • Fill up a jug with water, add ice, slice the lime and place it in the water and serve, you could also add lemon or mint 
    • Serve in a beautiful jug

I have come across the most delicious and refreshing Iced Tea recipe that my good friend Caroline passed on to me (thanks Caroline!).  Christmas Day is notorious for being a hot and sweaty day so this is a perfect rehydrating and refreshing drink and so easy to make.
Homemade Iced Tea
  • Ingredients 
    • Tea (I love love love the Exceptional range by Dilmah in Rose with French Vanilla, they come in a pack of 20 bags), Lemonade (home brand works great, for a healthy twist I buy the Zero Sugar or light version), Frozen berries or raspberries & Ice.
  • Method 
    • Boil water 
    • Add 2 tea bags to boiled water in a heat proof jug 
    • Allow to cool completely
    • Iced Tea
      • You can boil the water and let the tea infuse in the water and then finish the tea off when your guests arrive 
    • Add cold lemonade straight from the fridge 
      • The same ratio as the water used to infuse the tea 
    • Add frozen berries (as much as you desire) 
    • Add ice
You really can use any type of tea with this recipe but I find this one so fruity, delicious and refreshing. This iced tea would also work really well with a ginger and lemongrass tea. My favourite thing about having this iced tea is that I use Great Grandma Slicker’s jug and glasses, isn’t it a classic? Love the glass stirrer!


Now onto food...the best bit! To satisfy everyone I believe you need an array of sweet, savoury, naughty and healthy.

Mr Slicker will be head chef on the BBQ on Christmas morning, cooking all the good stuff, lots of bacon, eggs, mushie and tomato mix and sausages etc. To make things a little different I also plan to make quite a number of things to go with the BBQ’d goodness...

A great idea for a breakfast snack that’s easy to make and even easier to eat is a bacon and egg pie. This won’t be on our menu this year as we’ll all be bacon and egg’d out after the bbq but this is easy and delicious alternative to the usual.  

Bacon and Egg Pie
  • Ingredients 
    • Cooking Spray 
    • Bacon 
    • Bacon and Egg Pie
    • Egg
  • Method 
    • Preheat Oven to 200 degrees (fan forced) 
    • Spray a muffin tray with cooking spray to avoid the bacon sticking 
    • Layer bacon into a muffin tray 
    • Crack an egg into the hole 
    • Bake for 10 minutes until the egg is cooked and the bacon is crispy
I also plan to add a little French (ooh la la) to Christmas day with Nutella Croissants which are easier than you think!

Chocolate Croissant
  • Ingredients 
    • Puff Pastry (I buy the home brand; you can always make your own but seriously... “Aint nobody got time for that!” hehe), Nutella & 1 x egg
  • Method
    • Preheat oven to 200 degrees (fan forced) 
    • Line a baking tray with baking paper 
    • Allow puff pastry to defrost slightly so that it is pliable 
    • Place one sheet of puff pastry onto a large chopping board or chopping surface, cut in half, then cut each half on the diagonal. This will make 4 triangles from each puff sheet. 
    • Place a heaped teaspoon of Nutella onto each large end of the pastry 
      • You can also add mini marshmallows here and make it like a smores croissant, yummo,  
      • Or choc chips, chopped nuts or even chopped banana in here too, omg I’m salivating!!! 
    • Beat the egg with a fork to make an egg wash 
    • Brush the small end of the triangle with the egg wash 
    • Roll the triangles (starting at the large end of the triangle) once rolled ensure all sides are sealed and that beautiful Nutella cannot escape.  Do this by just pressing the sides together 
    • Bend the rolled up product into the shape of a croissant 
    • Place on baking tray and brush with egg wash 
    • Bake for 15-20mins checking occasionally, they are ready when the pastry has ‘puffed’ and they are golden. 
    • Optional: Sprinkle with icing sugar to really get into the French spirit.

CAUTION: the Nutella is very hot in the middle, be careful when you bite into them, especially when littlies are eating them

Chocolate Croissants

Alternative: you can also make savoury croissants with cheese, cheese and ham, cheese and bacon, fetta and spinach...the possibilities are endless really! If you don’t have Nutella in the house or don’t like it (who am I kidding, errrbody loves Nutella!) you can use melting buttons in milk, dark or white chocolate, which would be just as tasty!

To break up the heavy food I’ll also be serving fresh fruit for breakfast. A really cute idea to keep with the Christmas theme are Santa strawberries.

Strawberry Santas
  • Ingredients 
    • Strawberries & Cream 
  • Method 
  • Strawberry Santas
    • Simply cut the tip off a strawberry 
    • Place some cream on top 
    • Be sure it’s a firm cream so they hold; you may need to beat the cream to firm it up
    • Place the strawberry tip on top  
    • Put a dot of cream on top of the tip, and decorate as you please


Another healthy alternative is a yoghurt and muesli mix.
Yoghurt and Muesli Mix
  • Ingredients 
    • Yoghurt, Muesli (any variety you prefer) & Fruit to top 
    • Optional: honey, frozen berries, nuts 
  • Method 
    • Combine 2 tablespoons of your favourite yoghurt 
    • Add a tablespoon of muesli, continue to add until well combined (ensure the mix is not too dry) 
    • Mix and top with your favourite fruit (mine is banana) 
    • Optional: Drizzle with honey 
    • Optional: thaw some frozen berries from the iced tea recipe and top with them. 
    • Optional: If your muesli has no nuts, also top with raw nuts...Delish!!!!
Another great healthy idea is a breakfast skewer
Breakfast Skewer
  • Ingredients 
    • 1 ¾ milk, 2 eggs, 1 teaspoon of vanilla bean paste (I prefer this as it gives a richer and realer flavour, or 1 teaspoon of vanilla essence), 2 cups self raising flour, 1/3 cup caster sugar, cooking spray, banana, strawberries, Nutella & marshmallow.
       
  • Pancake Method 
    • Whisk milk, eggs and vanilla together in a jug 
    • Sift flour into a large bowl 
    • Stir in Sugar to flour 
    • Make a well in the dry mixture and add the milk mixture and whisk until well combined.
      Alternative: Use a packet mix  
    • Heat a large non-stick frying pan over medium heat 
    • Spray with cooking oil 
    • Place small spoonfuls into the pan to obtain the desired size 
    • Cook for 2 minutes or until bubbles appear on surface 
    • Flip and cook for a further 1-2 minutes or until cooked through 
    • Spray pan in between batches 
  • Method 
    • Spread Nutella onto one side of a cooled mini pancake
    • Cut banana, strawberries and marshmallows (or anything else you desire) into bite sized pieces
    • Place Nutella pancake onto the skewer, followed by banana, another Nutella pancake, strawberry  etc. 
Yummmmmm, who wouldn’t want one? This is good to prepare the night before or on Christmas morning.
